These cookies are similar to pillowy soft shortbread and filled with dulce de leche. If you’re not familiar with dulce de leche, it’s similar to a very soft caramel in both texture and flavor. I’ve flavored the cookies with espresso, giving them an overall taste reminiscent of a caramel latte.
