Janusz’s Ginger cookies
As much as I love baking, I also love to share a great recipe.

If you love red hot candies, you'll love these firm but soft ginger cookies.
Ingredients
- 175g salted butter, cubed and softened
- 125g granulated sugar
- 225g dark brown soft sugar
- 1 large egg
- 1 tsp vanilla extract
- 275g plain flour
- 1 tsp baking soda
- 4 tbsp ground ginger
- 1/2 tbsp ground cinnamon
- 1/2–1 tsp ground cloves, to taste
Tools
- Stand mixer with beater
- Mixing bowl
- Food scale
- 3 baking sheets lined with baking paper
- Oven preheated to 375°F
Instructions
- Beat the butter in a stand mixer on medium for 1–2 minutes until pale and creamy.
- Reduce speed to medium-low and add both sugars a spoonful at a time; beat about 3 minutes, scraping as needed, until combined.
- Add the egg and vanilla and mix until incorporated.
- In a separate bowl, sift together the flour, baking soda, ginger, cinnamon, and cloves; stir to combine.
- Add the dry mixture to the wet ingredients and mix to a very slightly sticky dough.
- Divide into about 60 pieces (roughly 1 Tablespoon each), roll into balls, place on lined baking sheets with space to spread, and lightly flatten the tops.
- Chill for 20 minutes while preheating the oven to 375°F.
- Bake for about 12 minutes, until spread and crisping at the edges. Cool completely on the sheets to set before serving.
