Janusz’s Ginger cookies

As much as I love baking, I also love to share a great recipe.

Quantity: Makes about 60 cookies

If you love red hot candies, you'll love these firm but soft ginger cookies.

Ingredients

  • 175g salted butter, cubed and softened
  • 125g granulated sugar
  • 225g dark brown soft sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 275g plain flour
  • 1 tsp baking soda
  • 4 tbsp ground ginger
  • 1/2 tbsp ground cinnamon
  • 1/2–1 tsp ground cloves, to taste

Tools

  • Stand mixer with beater
  • Mixing bowl
  • Food scale
  • 3 baking sheets lined with baking paper
  • Oven preheated to 375°F

Instructions

  1. Beat the butter in a stand mixer on medium for 1–2 minutes until pale and creamy.
  2. Reduce speed to medium-low and add both sugars a spoonful at a time; beat about 3 minutes, scraping as needed, until combined.
  3. Add the egg and vanilla and mix until incorporated.
  4. In a separate bowl, sift together the flour, baking soda, ginger, cinnamon, and cloves; stir to combine.
  5. Add the dry mixture to the wet ingredients and mix to a very slightly sticky dough.
  6. Divide into about 60 pieces (roughly 1 Tablespoon each), roll into balls, place on lined baking sheets with space to spread, and lightly flatten the tops.
  7. Chill for 20 minutes while preheating the oven to 375°F.
  8. Bake for about 12 minutes, until spread and crisping at the edges. Cool completely on the sheets to set before serving.
